Salad

This Salad I made for one of our christmas parties we went to last week. Its very simple and very yummy!!

Floret Salad
1 Head of Cauliflower
1 bunch of Broccoli
1 bag of baby carrots
1 bottle of Italian dressing
1 pkg. Italian dressing mix (powder form)
1 container of Crumbled Feta Cheese
Recipe says you can add grape tomatoes too but I didnt since they are out of season and I couldnt find any.

Cut up into bite size pieces the cauliflower, broccoli, carrots and tomatoes if you use them.
Place in a bowl and mix together italian dressing and dressing mix. Pour over the vegetables. Let sit over night in refrigerator. Before serving add the crumbled feta cheese and stir.

Broccoli Cheese soup

This soup is supposedly supposed to taste like the soup from Panera Bread. I have never ate there so I cant say if it is or not. It is really good and easy too!

1 bunch of Broccoli
6 Cups chicken broth
1-1/2 cup 1/2 and 1/2
1/2 Cup flour
3 Cups shredded cheddar cheese
Steam broccoli for 6 minutes. Take out and chop up into small pieces. Meanwhile in a pot combine the chicken broth and 1/2 and 1/2 and then slowly add the flour, stirring with a whisk. Cook for 5 minutes on medium or until it comes to a slight boil. Add Broccoli. Cook another 10 minutes. Add shredded cheese and stir/cook until cheese is melted.

Raspberry Truffles


Ok, so melting chocolate and I do NOT get along. I struggled so bad last year melting chocolate to dip pretzels in that we had to go buy more chocolate to melt cause I ruined like 4 bowls full. Well this year was the same. I ruined 2 bowls full of chocolate before I melted it right. Sigh. . . . So now you all know one of my cooking flaws. Lol
I was going to melt some white chocolate to drizzle over the truffles to make em look fancy but considering my luck this morning I decided not to waste the chocolate. .

Raspberry Truffle
1-1/3 Cup Chocolate Chips
1 T Butter
2 T Heavy Whipping cream
Melt these 3 together in a pot on the stove on medium heat. Keep stirring constantly towards the end. Stir it until it looks pretty smooth. Remove from the heat and add
2 T Raspberry Jelly make sure you get the jelly that says SEEDLESS cause otherwise your chocolate are gonna have raspberry seeds in them and that isnt pleasant.
Stir jelly into the chocolate mixture until smooth. Cover pot with saran wrap and set in freezer for 20 minutes or until it sets up a little.
I actually had it in the freezer for 40 minutes. It wont set up completely but after 40 minutes its pretty good.
Remove from freezer and scoop out in spoonfuls onto a wax paper covered cookie sheet.
Set cookie sheets in freezer for another 10-15 minutes or until the mounds of chocolate "dough" are pretty hard. Then take each mound and roll between your hands into a ball shape. Put on another clean sheet of wax paper and freeze another 5 minutes or so. Dip Balls in melted milk chocolate and lay on wax paper to dry. You can let air dry or freeze them for a few minutes.
I dipped the dough balls once in chocolate then let is dry then dipped them again. It makes them stay together better.

Now Im not gonna share how to melt the chocolate for dipping them in . . Lol. But I would suggest using chocolate melting wafers from walmart. I didnt use them this time and I think it would have been easier. They are back in the crafts part with the cake decorating stuff. They are in bags. They are actually for making mints and stuff in those molds so I think they would melt easier and dip better.

Pumpkin Cookies

So instead of cleaning my bathroom like I should be doing, I procrastinated and made cookies. These are THE BEST cookies I have had in a while. They are amazing, seriously you have to try them. They are so moist and oh so yummy! I didnt have my camera here, my husband had to take it to work so there is no photo. I saw this recipe on another cooking blog and had to try them . . .. .

Pumpkin Cookies

1 cup Crisco
1 cup sugar
1 cup pumpkin
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

Cream shortening and sugar. Add pumpkin, egg, and vanilla. Blend in dry ingredients.

Bake at 350 for 12 minutes. Spread caramel frosting on top.

Caramel Frosting
1 cup brown sugar
1/2 cup butter
1/4 cup milk
1 tsp. vanilla
1 1/2 cups powdered sugar

Combine brown sugar, butter and milk and bring to a boil over medium heat. Cook and stir for 2 minutes.
Remove from the heat and stir in vanilla. Cool to lukewarm, then gradually beat in the powdered sugar until frosting reaches spreading consistency.

Christmas Cookies Post #1

I got a head start on Christmas cookies this year. I always make 5 or 6 different kinds and make plates of cookies to take to our neighbors as a christmas gift.
Last week I made Monster Cookies and O Henry Bars.


Monster Cookies
10 Cups Oatmeal
1/2 Dozen Eggs
1/2# Butter
1-1/2 # Peanut Butter
4 t. Baking Soda
1# Brown Sugar
2 Cup Sugar
M & M's I didnt measure how much, I used the mini M&M's used for baking and just poured in. About 1/4 bag for 1/2 recipe. You can add more if you want more or less if you would rather not have as many.
Chocolate Chips I use mini Chocolate chips. And again I didnt measure. Just poured. I probably used about 1/4 bag of these too for 1/2 recipe.
Mix all together and drop by spoonfuls onto a greased baking sheet. Bake at 350 for 10 minutes.
This makes a HUGE batch so I only made half of a batch and had about 4 dozen cookies.

O'Henry Bars (No picture for these)
4 Cups Oatmeal
1 Cup butter
1 Cup Brown Sugar
1/2 Cup Sugar
1 Cup Chocolate Chips
1 Cup Peanut Butter
Mix Oatmeal, Butter and sugars together and pat into a greased 10X15 pan. Bake at 350 for 12 minutes. Melt Chocolate Chips and Peanut butter together in a microwave safe bowl. Pour over hot bars. Let set til cooled completely. Makes about 24 bars or more.

Chili

Ok, I made chili last night and my husband said it was the best I have ever made, which is funny cause I didnt really follow a recipe. Lol.
But here is the recipe I made up/part of one recipe/part of another. . .

Chili
1 # Ground Beef, cooked
1 Roll of Chili with Beans. (Red package shaped like a roll I buy in the meat section at Walmart. )
1 Can Red Kidney Beans, UNDRAINED
5 Cups Water
Chili Powder
Ketchup
Brown Sugar

In a big pot put 5 cups water and the roll of Chili with Beans. Cook until the roll has dissolved. Add Kidney Beans, hamburger and Chili Powder, I just dumped chili powder until it tasted right. I used probably about 2 T. Spoons?? Stir. Then add some Ketchup and Brown sugar. Again I just dump. Ketchup was probably about 1/4 Cup and the Brown sugar about the same. You can add more brown sugar if you like a sweeter Chili or less if you dont.
Simmer on low for 1/2 hour or more.

Russian Tea

No really interesting new recipes this week. I made a Cheesburger soup yesterday but wasnt real impressed with it. So I will leave you with this recipe for Russian Tea I made yesterday. Its so yummy!

Russian Tea Mix

2 cups TANG
1/2 cup instant tea
1 package powdered lemonade mix
1 1/4 cups sugar
1/2 teaspoon cloves
1 teaspoon cinnamon

Mix together well. Store in a covered jar.

Instructions:

Mix with hot water to taste, stirring well to dissolve.

Pumpkin Waffles


2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
1 1/2 cups milk
4 tablespoons butter, melted
1/2 cup canned pumpkin

Mix together Flour, Sugar, Baking powder, Cinnamon & Salt. In another bowl mix together the eggs, milk, butter and pumpkin. Mix the dry ingredients with the wet ingredients. Pour into Waffle Iron ( I used about 1/4 cup for a 2 waffle Iron)

Taco Soup & Apple Turnovers


Taco Soup
1 Can Black Beans
1 Can Kidney Beans
1 Can Corn
1 Can Diced Tomatoes
1 Can Rotel Diced tomatoes and green chilies
1 package Taco Seasoning
1 Package Ranch Dressing mix
1 # Hamburger, cooked
1 Cup Water

Mix together all ingredients in a Crock Pot. I cooked mine on High for 1 hour then put it down to low for another 30 minutes or until we ate it. If you wanted to let it cook longer you could put it on low or warm for a couple hours.
Serve with Crushed Corn Chips and Taco blend Cheese.

Apple Turnovers
1 Tube of Refridgerated Biscuits (approx.10)
1 Apple, peeled and diced
Lay out biscuits and roll them a bit more so they are flatter and larger around. Place a spoonful of apples on the biscuits. Fold one side of the biscuit over and seal edges to make a half circle.Place in a baking dish.

1 Cup Sugar
1 stick butter
1 T Cinnamon
12 Oz. Mountain Dew
In a saucepan on the stove heat these 4 together til it comes to a boil. Pour over Biscuits in pan.
Bake at 350 for 10-15 minutes.

Hawaiian Chicken & Roasted Ranch Potatoes


Hawaiian Chicken
This is a VERY simple recipe. All you need is some Bar-B-Que sauce (I use Sweet Baby ray's, Best kind if you ask me) and a can of Pineapple Rings with Juice.

I didnt measure because I didnt have a recipe, I was just experimenting.
But I used about 1/3 of the juice in the can of Pineapple rings and then used 2 rings on top of the chicken and about 1/2 Cup of Barbque sauce, give or take a little.
Stir together the barbque sauce and the pinapple juice until its smooth. Pour over Chicken in a baking dish. Lay a Pineapple ring on top of each chicken.
Bake at 350 for 45 minutes -60 minutes.


Roasted Ranch Potatoes
This was a experiment too. Lol I just took 2 large Potatoes, peeled them and cut them into cubes.

Then I put them in a tupperware bowl and drizzled a little Olive oil over the potatoes. Next Sprinkle with some ranch dressing mix (I used about 1/4 of the package for it. You can use more if you want more flavor or less if you want less flavor.) and some salt and pepper. Put on the lid to the tupperware container and shake it to mix it.

Dump it all in a baking dish and bake at 350 for about and hour.

Blueberry Pie Filling

BLUEBERRY PIE FILLING
3/4 c. sugar
3 tbsp. corn starch
1/4 tsp. salt
1/2 c. water
4 c. fresh or frozen blueberries
1 tbsp. lemon juice
2 tbsp. butter
In saucepan combine sugar, salt and corn starch with water, blueberries and lemon juice. Cook over medium heat until thick. Remove from heat and stir in butter.

I make this all the time only I use it as topping for Pancakes or Waffles. Its really yummy when its still warm with fresh baked pancakes and a little syrup!! Its one of our favorite suppers!!

Easy Chocolate Cake

My Pampered chef lady made this the night of my party. . . . .


All you have to do is mix together a regular Chocolate cake mix like the box says.
(You can use milk chocolate, Chocolate, dark chocolate, German Chocolate, Devils food. . . )
Pour the prepared cake batter in a microwave safe dish, the lady used a round bundt pan but you could use any kinda of bowl that is mic safe.
Then take a can of Store bought Frosting. She used Milk chocolate but you can use whatever kind of chocolate you want. Drop it by spoonfuls on the cake mix. DO NOT STIR IT IN. Just let it sit on the top. Then Microwave for 15 minutes, you might want to watch it since Microwave are all different. I would set the timer for 10 minutes and check it. Then when its done place it on a plate or serving plate. What happens is the frosting sinks to the bottom of the bowl while its cooking and then when you dump the cake out the frosting is all on the top of the cake. Its so yummy!

List 6 Random Things about you
1. I hate mice with a passion. I dont mind spiders, snakes, roaches at all but I literally cant stand mice. (Ask my husband)

2. I have a thing for Matthew McConaughey/Kate Hudson Movies- Fools Gold, How to lose a guy in 10 days, etc But then again I just love Matthew. . .

3. I never buy the same brand of shampoo and conditioner. I always buy a new kind each time I run out. Not really sure why, guess I just get bored with one kind. Same way with deodorant, I never buy the same kind. Come to think of it I never buy the same kind of laundry soap, toothpaste, gum, dish soap. . .

4.I always wanted to go to Hawaii for my honeymoon. Ever since I can remember. But then when it came time to pick a place for our honeymoon after I found my honey I didnt even want to go to Hawaii!

5. Up until last April I had not been to any DR (besides chiropractor) since I was 2 years old and I had never had blood drawn until this past April.

6. I hate Horror/scary movies and dont like Dr's and blood but I love the TV series House and Bones and CSI: Miami. Go figure.

Caramel Apple Pizza

Ok that is not a picture I took since I still didnt have my camera back when I made it, but it is from the website I got the recipe from (Taste of Home or Pampered chef, cant remember which one) But trust me when I say this is so yummy. I took a huge pan of it and didnt bring any of it home!!

Caramel Apple Pizza
1 Roll Sugar Cookie dough
1 Box Cream Cheese
1/3 Cup Peanut Butter (creamy)
2 T Brown Sugar
1 T Vanilla
2 Apples, peeled and sliced thinly
Caramel Ice Cream topping or Caramel Apple dip

In a 9x13 baking pan lay out sugar cookie dough. Bake at 350 for 10 minutes or until browned.
Let cool completely. Meanwhile, combine cream cheese, peanut butter, brown sugar and vanilla. Mix well. Spread over cooled cookie dough crust. Dip sliced apples in Sprite or lemon juice and layer on pizza. Melt Caramel in microwave until really runny (I used Caramel apple dip like you find in the store beside the apples and I microwaved it about 15 seconds)
You can then use a spoon to drizzle the caramel over the apples but I poured the caramel sauce into a ziploc bag and cut one of the corners off at the bottom and just drizzled it over the pizza that way.
The picture above shows peanuts on top but I never add peanuts since I dont really like them.

Cheddar Biscuits

Well I dont have any pictures of these since when I made them a friend had borrowed my camera for a wedding, but they are really yummy!!!
They taste just like Red Lobsters

Cheddar Biscuits
2 Cups Bisquick mix
2/3 Cup Milk ( I used a bit more than this)
1 Cup Shredded Cheese
Mix all together and drop by spoonful onto a baking sheet. Bake at 350 for 10 minutes or until bottoms are brown.
Immediently after taking out of oven melt 3 T of Butter and mix in some Garlic Powder. Spoon butter mixture over hot biscuits. .
Serve!

Oatmeal Bars


This is a very yummy dish. I love it! If you like Peanut Butter you will love this! Its not really that difficult to make either.


2 cups melted butter
2 cups brown sugar
2 tsp. soda
4 cups oatmeal
3 cups flour
1 tsp. salt
2/3 cup peanut butter
2 cans sweetened condensed milk
2 cups mini choc. chips or mini m&m's

Mix together melted butter, sugar, soda, oatmeal, flour & salt until it's crumbly.
Set aside 3 cups. Press the rest into a greased 9X13 pan.

Bake at 350 for 10 minutes.
Mix peanut butter and sweetened condensed milk. Spread over the baked crust


Mix mini choc chips or m&m's with the reserved crumbs. Sprinkle the reserved crumbs on top of the peanut butter and sweetened condensed milk mixture. Bake at 350 for 20 minutes

Mexican Lasagna

Mexican Lasagna

1 lbs ground beef
1 medium onion, chopped
4 garlic cloves, minced
2 cups salsa
1 can (16 oz) refried beans
1 can 15 oz) black beans, rinsed and drained
1 can (10 oz) enchilada sauce
1 can (4 oz) chopped green chilies
1 envelope taco seasoning
1/4 tsp. pepper
6 flour tortillas
3 cups (12 oz) shredded mexican cheese blend, divided
2 cups broken tortilla chips
Sour cream, sliced ripe olives, guacamole, and chopped tomatoes, optional

In a large skillet, cook beef, onion, and garlic over medium heat until meat is no longer pink; drain. Stir in salsa, beans, enchilada sauce, chilies, taco seasoning, and pepper; heat through.
Spread 1 cup meat mixture in a greased 9×13 baking pan.
Layer with 2 tortillas,a third of the meat mixture,and 1 cup of cheese.
Repeat layers. Top with remaining tortillas and meat mixture. The pan will be FULL.
Cover and bake at 375 for 30 minutes.
Uncover; sprinkle with remaining cheese and top with tortilla chips. Bake 10-15 minutes more or until cheese is melted. Let stand 10 minutes before serving..Garnish with sour cream, olives, guacamole, and tomatoes if desired. Yield: 12 servings.
I only used Sour Cream to eat with it and it was really good.

Garden Chicken Casserole


This is a yummy casserole! Its got almonds & water chestnuts in it so its crunchy. If you dont like crunch you might not like it.

Garden Chicken Casserole
3 Cups Cooked cubed Chicken
1 can Water chestnuts, drained and chopped
1 Cup diced Celery
3 T chopped onion
1 Cup cooked Wild rice I used uncle ben's brand
1 Can Condensed cream of chicken soup
3/4 Cup Mayo
1/ Cup chopped Almonds

Mix all together and place in greased casserole dish. Crush about 1 sleeve of crackers and put on top of the casserole. Melt 1/4 Cup butter and drizzle over cracker crumbs. Bake uncovered at 350 for 40 minutes.

I didnt measure the rice after it was cooked but just dumped the whole box full into the casserole, and It was too much rice. The casserole was kinda dry, so make sure you use only the 1 cup cooked wild rice it calls for.

It was still very good, even a bit dry. We both had 3 helping of it and I am getting ready to go get some for my lunch too!

Herbed Baked Chicken

Tonight for supper we had Herbed Baked Chicken, California Veggie Mix & Garlic Cheese bread.

Herbed Baked Chicken
2 Chicken Breast
1 Can Condensed cream of Mushroom Soup
1 T. Lemon Juice

Mix Soup and Lemon Juice together. Pour over Chicken breast in a baking dish. Sprinkle with Lemon Pepper seasoning. Bake at 350 for 1 hour, Occasionally spoon soup mixture over top of chicken and sprinkling more lemon pepper seasoning.
I bake it 1 hour with aluminum foil over the pan then take the foil off and bake the another 10-15 minutes with out foil to let chicken brown a little bit.

For Garlic Cheese bread i cut it into slices and spread butter on one side of the slice. Put the un buttered side down on a cookie sheet. Sprinkle garlic powder over the buttered side and sprinkle mozzarella cheese on top. Broil until browned.




Cake Mix Cookies


I made them yesterday for our Labor Day cookout we had. But I must say I love these cookies. I always get great response when I make these.

Cake Mix Cookies
1 Box Butter Pecan Cake mix
1 Box French Vanilla Cake mix
1 Cup Oil
4 T. Water
4 Eggs

Mix all together. Stir in Chocolate chips. Drop spoonfuls onto a greased cookie sheet. (I used the pampered chef cookie scoop)
Bake at 350 for 10 minutes. They wont look brown on top but you dont want to over cook them either. Let them cool on cookie sheet about 2-3 minutes then place on a rack to cool completely.
Makes about 4-5 dozen cookies with the medium size cookie scoop.

**Edit**
You can use any kind of cake mix to make your own cookie combo up. . Some I have tried are
-Devils Food Cake mix & Chocolate cake mix
-Devils Food Cake mix & French Vanilla cake mix
-You can also use the funfetti cake mix to make cookies with sprinkles in them. Just use 2 funfetti mix's or 1 Funfetti & 1 french vanilla

Chicken Stirfry




Tonight I made Chicken Stirfry. Now It wasnt what I consider cooking from scratch. If I was really going to do it right I would have made my stirfry from fresh vegetables, but since I was a bit lazy I used frozen bags of Stirfry veggies.

First- Cook Chicken in a skillet with a little oil until its no longer pink. Then add 1 bag of frozen Stirfry veggies. Cook, stirring occasionally until veggies are tender.
Now my "secret" is that I buy a jar of this stuff for the sauce.

Once the veggies are cooked pour a jar of this on and stir.
I also made some stir fry green beans. I opened a can of home grown green peppers and sauted them in some butter and garlic for a few minutes. Mine were already cooked since they were canned so they were pretty soft but I think it would work better if you used fresh green beans and saute'd them just a little so they are still crunchy.

Chicken Rice Curry & Potato Skins

Tonight for supper we are having Chicken Rice Curry or as my dad always called it "chicken and rice in a hurry". Its a easy casserole to make.
1/2 Cup Chopped onion
1 Cup chopped Celery
1/2 Cup margarine
2 Cups cooked cubed Chicken
1 Cup uncooked rice
1/2 teas Salt
1/4 teas Pepper
1 teas. Curry Powder
2 Cans Cream of Chicken soup
2 Cups milk
1-1/2 Cup Chicken broth
Cook onion and celery in margarine until soft. Combine all ingredients in a cooking dish. Cover and bake for 2 hours at 350,stirring occasionally. Uncover and brown last 10 minutes. Serves 10
I of course cut this recipe in half when I made it. BUT forgot to cut the butter in half. :-( It still turned out yummy!

Then we had Loaded Potato Skins.
Select 3 potatoes of the smaller size. Wash them and wrap in foil. Bake as normal. I baked mine for 1 hour. Take off foil and let cool. Cut the potatoes in half lengthwise. Scoop out with a spoon the inside of the potatoes, leaving 1/2 inch of potato on the skins. Brush the inside and outside of each potato half with vegetable oil and sprinkle with salt. Place in a baking dish and bake at 400 for 10 minutes on each side. Let cool. Once cool sprinkle shredded cheese in the center of each half and bacon pieces. Place back in oven until cheese is melty. Serve with sour cream.

Rhubarb Pie

Rhubarb pie just like my grandma always made. Now, this is my mom's recipe, and her and her 5 sisters argue over who actually has grandma's real recipe since they all have a little different recipe. So we dont know who really has grandma's recipe but my mom's is what I grew up with and its the best in my opinion :-)

Cut up Rhubarb into small dices. Fill your pie pan up about 1/2 full.

Then in another bowl mix together 1 egg, 2 T flour, 3/4 Cup Sugar (I never do quite that much, more like a full 1/2) , dash of salt & 1/2 can of Milnot. Mix together good and pour over rhubarb in pie shell. Sprinkle cinnamon on top.

Bake at 375 for 30 minutes. (In my oven it wasnt done in 30 minutes but my crust was so I took some aluminum foil and covered the crust around the edge and baked it a while longer.

Yum! In my opinion its better when its cold so I always refridgerate it for a while before eating, but you can eat it warm.

Chicken Quesadilla's & Pizza Pockets

First up is Pizza Pockets, sometimes known as stromboli. Its very easy to make since you use refrigerated pizza dough.

1 13.8 oz can Pillsbury refrigerated pizza dough
8 oz pepperoni
5 fresh mushrooms
3/4 cup pizza sauce
Italian seasoning
8 oz shredded cheese
Parmesan cheese
2 Tbsp. melted butter

Spread the pizza dough out in the pan. Sprinkle generously with Parmesan cheese.
Put pepperoni on one half, leaving about a 1/2″ space along the edge.

Wash and slice mushrooms and put over pepperoni.
Sprinkle on some Italian seasoning and spoon pizza sauce over
Add the cheese.
Flip other half of dough over toppings and pinch edges together to seal.

Bake at 400 for 20 - 25 minutes, depending on how browned you like it. Brush melted butter on top right after it comes out of the oven
Sprinkle with some more Parmesan cheese.

Next is . . . . Chicken Quesadillas. These are very simple. It uses only 4 items.


1 lb. boneless chicken breast halves, cubed
1 can Campbell's Southwest Style Pepper Jack soup
1/4 cup water
8 flour tortillas (8″), warmed

Preheat oven to 325. Cook chicken in nonstick skillet until done and juices evaporate, stirring often. Add soup and water and heat through.
Spoon about 1/3 cup chicken mixture on half of each tortilla to within 1/2″ of the edge. Moisten edge with water.
Fold over and seal. Place on 2 baking sheets . Bake 5 min. or until hot..Cut into wedges and serve with salsa. And/or sour cream. I ate mine with sour cream.

Banana Cake & Spaghetti Bake

Hello and welcome to my food blog. I like the bake and cook so I decided I would start a blog about it to share recipes. . . .
Tonight for supper I made Spaghetti bake, Applesauce, Garlic Bread and Banana Cake. I was planning on making rhubarb pie but had a bunch of banana's that needed to be used up so I make that instead.
Spaghetti Bake
16 oz. Spaghetti noodles
3 eggs, beaten
1 T Vegetable oil
1/2 Cup Parmesan cheese (grated)
2 Cups Mozzarella cheese, divided
dash Garlic powder
Salt & Pepper
12 oz. Jar Spaghetti sauce
Cook spaghetti noodles for 10 minutes in boiling water. Drain.

Meanwhile in another bowl mix together parmesan cheese, 1 cup mozzarella cheese, oil, eggs, garlic powder, salt & Pepper.
Add drained, cooked noodles to this mixture. Pour into a 9X13 greased baking pan. Pour Spaghetti sauce over all. Cover with aluminum foil and bake at 350 for 30 minutes.

After 30 minutes take off the foil and sprinkle 1 cup of mozzarella cheese over dish. Place back in oven til cheese is melted.

Side note: I cut the recipe in half and made a 9X9 dish for us.


Banana Cake with Fudge Frosting


2 cups Gold Medal® all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup granulated sugar
1 cup butter or margarine, softened
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
1 cup mashed bananas (about 2 large)

Fudge Frosting
1 cup granulated sugar
1/2 cup unsweetened baking cocoa
1/2 cup milk
1/4 cup butter or margarine
2 tablespoons light corn syrup
1 to 1 1/2 cups powdered sugar
1 teaspoon vanilla

1. Heat oven to 350ºF. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In medium bowl, mix flour, baking soda, cinnamon and salt; set aside.

2. In large bowl, beat 1 cup sugar and 1 cup butter with electric mixer on high speed, scraping bowl occasionally, until fluffy. Beat in eggs and 1 teaspoon vanilla. Gradually beat in flour mixture alternately with buttermilk until smooth. Stir in bananas. Pour into pan.

3. Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool completely, about 1 hour.

4. Meanwhile, in 2-quart saucepan, mix 1 cup granulated sugar and the cocoa. Stir in milk, 1/4 cup butter and the corn syrup. Heat to boiling, stirring frequently. Boil 3 minutes, stirring occasionally; remove from heat. Beat in powdered sugar and 1 teaspoom vanilla with spoon until smooth and spreadable. Spread Fudge Frosting on cooled cake.
